Ingredients

  • 1.5 Pounds (lb) turkey, ground
  • 1 Whole onion, minced
  • 3 Cloves garlic, minced
  • 2 4 Ounces (oz) cans green chile peppers, minced
  • 1 Tablespoon (tbsp) cumin, ground
  • 1 Tablespoon (tbsp) oregano, dried
  • 0.5 Teaspoon (tsp) cinnamon, ground
  • 1 Pinch cayenne pepper, to taste
  • 1 Pinch white pepper, to taste
  • 5 Cups chicken broth
  • 3 15 Ounces (oz) cans cannellini beans, divided
  • 2 Cups Monterey Jack cheese, shredded
  • 1 Tablespoon (tbsp) olive oil
  • 1 Teaspoon (tsp) kosher salt
  • 1 Pinch cilantro, torn, for garnish
  • 1 Pinch sour cream, for garnish
  • 1 Pinch tortillas, warmed, for serving

Steps

  1. Heat olive oil in a large pot over medium heat. Add the ground turkey, minced onion, and minced garlic. Cook and stir until the turkey is browned and the onions are translucent, about 10 minutes. Season with kosher salt.
  2. Stir in the minced green chile peppers, cumin, oregano, cinnamon, cayenne pepper, and white pepper. Cook for an additional 5 minutes to allow the spices to bloom.
  3. Pour in the chicken broth and add two cans of cannellini beans. Bring the mixture to a simmer.
  4. Puree the remaining can of cannellini beans in a blender or food processor until smooth. Stir the pureed beans into the chili to thicken it.
  5. Gradually add the shredded Monterey Jack cheese, stirring continuously until the cheese is fully melted and incorporated into the chili.
  6. Simmer the chili for another 10 minutes, stirring occasionally, to allow the flavors to meld together.
  7. Serve the chili hot, garnished with torn cilantro and a dollop of sour cream. Accompany with warmed tortillas on the side. Enjoy!
