Ingredients

  • 4 Whole potatoes, peeled
  • 1 Tablespoon (tbsp) extra-virgin olive oil
  • 0.5 Cups red bell pepper, diced
  • 0.5 Cups yellow bell pepper, diced
  • 0.25 Cups all-purpose flour
  • 2 Cups chicken broth
  • 1 Pinch black pepper, to taste
  • 3 Ounces (oz) baby spinach leaves
  • 0.5 Cups Parmesan cheese, grated
  • 2 Tablespoons (tbsp) real bacon, crumbled
  • 1 Tablespoon (tbsp) garlic, minced
  • 2 Tablespoons (tbsp) butter
  • 0.5 Cups cream
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  2. Meanwhile, heat the olive oil in a saucepan over medium heat. Add the red and yellow bell peppers, and cook until the peppers begin to soften, about 3 minutes. Stir in the flour, and cook for 3 minutes more. Pour in the chicken broth, and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer gently for 15 minutes. Season to taste with black pepper.
  3. Once the potatoes have finished draining, return them to the pot. Add the baby spinach, Parmesan cheese, bacon, and garlic; mash until smooth. Fold in the butter and cream until incorporated. Season to taste with salt and pepper.
  4. Serve the mashed potatoes with the bell pepper gravy drizzled on top or on the side. Enjoy the creamy, flavorful blend of spinach and potatoes with the vibrant bell pepper gravy.
