Ingredients

  • 3 Whole sweet potatoes
  • 2 Whole bananas
  • 0.5 Cups white sugar
  • 0.75 Cups brown sugar, packed
  • 0.5 Cups pecans, chopped
  • 0.25 Cups evaporated milk
  • 1 Teaspoon butter
  • 1 Teaspoon vanilla extract
  • 1 Teaspoon cinnamon, ground
  • 0.5 Teaspoon nutmeg, ground
  • 0.5 Cups coconut, shredded
  • 1.5 Cups marshmallows, miniature

Steps

  1. Preheat your oven to 450 degrees F (230 degrees C) and grease an 8x12 inch baking dish.
  2. Bring a pot of salted water to a boil. Add the sweet potatoes and cook until tender but still firm. Drain and transfer to a large bowl to cool.
  3. In a mixing bowl, combine the cooled sweet potatoes, bananas, white sugar, brown sugar, pecans, evaporated milk, butter, vanilla extract, cinnamon, and nutmeg. Mix well until all ingredients are thoroughly combined.
  4. Pour the mixture into the prepared baking dish. Evenly sprinkle the shredded coconut over the top, followed by the miniature marshmallows.
  5. Bake in the preheated oven for 10 to 15 minutes, or until the marshmallows are golden brown. Serve warm and enjoy!
