Ingredients

  • 1 9 Inch unbaked pie crust
  • 2 Tablespoons (tbsp) unsalted butter, melted
  • 1 Cup cooked sweet potatoes, mashed
  • 2 Large eggs, whisked
  • 0.75 Cup light brown sugar
  • 0.5 Teaspoon (tsp) ginger, ground
  • 0.5 Teaspoon (tsp) cinnamon, ground
  • 0.5 Teaspoon (tsp) nutmeg, grated
  • 1 Teaspoon (tsp) vanilla extract
  • 0.5 Teaspoon (tsp) salt
  • 0.5 Cup dark corn syrup
  • 1 Cup evaporated milk
  • 1.5 Cups pecans, chopped
  • 2 Cups heavy whipping cream
  • 3 Tablespoons (tbsp) confectioners' sugar
  • 0.25 Cup hazelnut liqueur
  • 0.25 Cup pecan halves

Steps

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Prepare the dough for one 9 inch pie and refrigerate until ready to bake.
  3. In a large bowl, blend together the melted butter, mashed sweet potatoes, whisked eggs, light brown sugar, ground ginger, ground cinnamon, freshly grated nutmeg, vanilla extract, salt, dark corn syrup, and evaporated milk.
  4. Pour the filling into the prepared pie crust and sprinkle with chopped pecans.
  5. Bake in the preheated oven for 40 to 45 minutes, or until a knife inserted into the center comes out clean. Set aside to cool.
  6. In a separate bowl, beat together the heavy whipping cream, confectioners' sugar, and hazelnut liqueur until soft peaks form.
  7. Top the cooled pie with the whipped cream and garnish with pecan halves.
