- 1 Pound (lb) salmon fillet
- 1 Tablespoon (tbsp) butter, melted
- 2 Cups cooked white rice
- 1 Whole mango, peeled
- 1 Tablespoon (tbsp) fresh cilantro, minced
- 1 Teaspoon (tsp) lemon peel, zested

- Preheat the oven to 450 degrees F (230 degrees C). Lightly grease a shallow 9x13 baking dish.
