Ingredients

  • 2 Tablespoons (tbsp) coriander seeds, ground
  • 1 Tablespoon (tbsp) brown sugar, packed
  • 1 Teaspoon (tsp) lemon-pepper seasoning
  • 1 Pound (lb) salmon fillet
  • 1 Tablespoon (tbsp) butter, melted
  • 2 Cups cooked white rice
  • 1 Whole mango, peeled
  • 1 Tablespoon (tbsp) fresh cilantro, minced
  • 1 Teaspoon (tsp) lemon peel, zested

Steps

  1. Preheat the oven to 450 degrees F (230 degrees C). Lightly grease a shallow 9x13 baking dish.
  2. In a small bowl, combine the coriander, brown sugar, and lemon-pepper seasoning. Mix well.
  3. Place the salmon fillet skin side down in the prepared baking dish. Brush the top and sides of the fillet with melted butter. Evenly sprinkle the coriander spice mixture over the fish, gently pressing it into the salmon.
  4. Dice the peeled mango and mix it with the minced cilantro and zested lemon peel into the cooked rice.
  5. Spoon the rice mixture around the salmon in the baking dish.
  6. Bake in the preheated oven until the salmon flakes easily with a fork, approximately 4 to 6 minutes per 1/2 inch thickness.
  7. Cut the salmon into 4 pieces. Divide the rice among 4 serving plates and place a piece of salmon on top of each. Serve immediately.
