Ingredients

  • 1.75 Cups unsweetened pineapple juice
  • 1 Cup white sugar
  • 2 Large eggs, whisked
  • 2 Tablespoons (tbsp) all-purpose flour
  • 2.5 Teaspoons (tsp) salt
  • 1 Tablespoon (tbsp) lemon juice
  • 1 Tablespoon (tbsp) vegetable oil
  • 16 Ounces (oz) acini di pepe pasta, cooked
  • 3 11 Ounces (oz) cans mandarin oranges, drained
  • 2 20 Ounces (oz) cans pineapple tidbits, drained
  • 1 20 Ounces (oz) can crushed pineapple, drained
  • 8 Ounces (oz) container frozen whipped topping, thawed
  • 1 Cup miniature marshmallows
  • 1 Cup shredded coconut

Steps

  1. Gather all ingredients.
  2. In a saucepan, combine pineapple juice, sugar, eggs, flour, and 0.5 teaspoon salt. Stir and cook over medium heat until thickened.
  3. Remove from heat and stir in lemon juice. Let the mixture cool to room temperature, about 1 hour.
  4. Bring a large pot of water to a boil. Add vegetable oil and remaining 2 teaspoons salt. Add pasta and cook until al dente, about 5 to 7 minutes. Drain and rinse under cold water.
  5. In a large bowl, combine cooked pasta, cooled egg mixture, mandarin oranges, pineapple tidbits, crushed pineapple, and whipped topping. Mix well and refrigerate until chilled, 8 hours to overnight.
  6. Before serving, add marshmallows and coconut. Toss and serve.
