Ingredients
- 1.75 Cups unsweetened pineapple juice
- 1 Cup white sugar
- 2 Large eggs, whisked
- 2 Tablespoons (tbsp) all-purpose flour
- 2.5 Teaspoons (tsp) salt
- 1 Tablespoon (tbsp) lemon juice
- 1 Tablespoon (tbsp) vegetable oil
- 16 Ounces (oz) acini di pepe pasta, cooked
- 3 11 Ounces (oz) cans mandarin oranges, drained
- 2 20 Ounces (oz) cans pineapple tidbits, drained
- 1 20 Ounces (oz) can crushed pineapple, drained
- 8 Ounces (oz) container frozen whipped topping, thawed
- 1 Cup miniature marshmallows
- 1 Cup shredded coconut
Steps
- Gather all ingredients.
- In a saucepan, combine pineapple juice, sugar, eggs, flour, and 0.5 teaspoon salt. Stir and cook over medium heat until thickened.
- Remove from heat and stir in lemon juice. Let the mixture cool to room temperature, about 1 hour.
- Bring a large pot of water to a boil. Add vegetable oil and remaining 2 teaspoons salt. Add pasta and cook until al dente, about 5 to 7 minutes. Drain and rinse under cold water.
- In a large bowl, combine cooked pasta, cooled egg mixture, mandarin oranges, pineapple tidbits, crushed pineapple, and whipped topping. Mix well and refrigerate until chilled, 8 hours to overnight.
- Before serving, add marshmallows and coconut. Toss and serve.
