- 1 Quart (qt) water
- 1 Set giblets from a turkey
- 0.25 Medium yellow onion, minced
- 1 Stalk celery, divided
- 1 Cube chicken bouillon
- 0.5 Teaspoon (tsp) salt
- 0.5 Teaspoon (tsp) ground black pepper
- 2 14.5 Ounces (oz) cans chicken broth
- 4 Large hard-cooked eggs, minced
- 0.5 Cup (c) milk
- 2 Tablespoons (tbsp) cornstarch
Steps
- In a large pot, bring 1 quart of water to a boil. Add the turkey giblets, minced onion, and celery. Reduce heat and simmer for 30 minutes.
- Add the chicken bouillon cube, salt, and pepper to the pot. Stir until the bouillon is dissolved.
- Pour in the chicken broth and continue to simmer for another 15 minutes.
- In a small bowl, mix the milk and cornstarch until smooth. Gradually add this mixture to the soup, stirring constantly until the soup thickens.
