Ingredients

  • 1 Quart (qt) water
  • 1 Set giblets from a turkey
  • 0.25 Medium yellow onion, minced
  • 1 Stalk celery, divided
  • 1 Cube chicken bouillon
  • 0.5 Teaspoon (tsp) salt
  • 0.5 Teaspoon (tsp) ground black pepper
  • 2 14.5 Ounces (oz) cans chicken broth
  • 4 Large hard-cooked eggs, minced
  • 0.5 Cup (c) milk
  • 2 Tablespoons (tbsp) cornstarch

Steps

  1. In a large pot, bring 1 quart of water to a boil. Add the turkey giblets, minced onion, and celery. Reduce heat and simmer for 30 minutes.
  2. Add the chicken bouillon cube, salt, and pepper to the pot. Stir until the bouillon is dissolved.
  3. Pour in the chicken broth and continue to simmer for another 15 minutes.
  4. In a small bowl, mix the milk and cornstarch until smooth. Gradually add this mixture to the soup, stirring constantly until the soup thickens.
  5. Stir in the minced hard-cooked eggs and cook for an additional 5 minutes.
