  • 24 Ounces (oz) cream cheese
  • 1 Cup white sugar
  • 5 Whole eggs
  • 1 Teaspoon (tsp) vanilla extract
  • 8 Ounces (oz) sour cream
  • 1 Cup white sugar
  • 1 Teaspoon (tsp) vanilla extract

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Line cupcake pans with paper cupcake liners.
  2. In a medium bowl, cream together the cream cheese and 1 cup of sugar until smooth.
  3. Stir in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in 1 teaspoon of vanilla extract.
  4. Spoon the cream cheese mixture into the cupcake pans, filling each about 2/3 to 3/4 full.
  5. Bake in the preheated oven for 30 minutes, or until the tops are golden brown. Remove from the oven and let cool for 5 to 10 minutes.
  6. For the sour cream topping, whisk together the sour cream, 1 cup of sugar, and 1 teaspoon of vanilla extract until smooth.
  7. Spoon the sour cream mixture onto the top of each cupcake, filling the well created by the cooling process.
  8. Return the cupcakes to the oven and bake for an additional 5 to 7 minutes, until the topping is set.
  9. Allow the cupcakes to cool completely in the pans on a wire rack before removing. For an extra touch, add a dollop of your favorite pie filling on top before serving.
