Ingredients

  • 9 Ounces (oz) pitted prunes, drained
  • 1 Cup all-purpose flour
  • 0.625 Cup white sugar
  • 1 Tablespoon (tbsp) vanilla sugar
  • 1 Teaspoon (tsp) baking powder
  • 1 Pinch salt
  • 4 Whole eggs
  • 3 Cups whole milk
  • 2 Tablespoons (tbsp) rum

Steps

  1. Preheat the oven to 450 degrees F (230 degrees C). Grease a shallow 2-quart baking dish.
  2. Heat prunes with enough water to cover in a saucepan and bring to a simmer. Simmer until prunes are tender but still hold their shape, about 10 minutes. Drain prunes and arrange them in the bottom of the prepared baking dish.
  3. In a large bowl, whisk together the flour, white sugar, vanilla sugar, baking powder, and salt.
  4. Whisk in the eggs, one at a time, beating well after each addition.
  5. Gradually pour in the milk, stirring vigorously with a wooden spoon until combined. Stir in the rum.
  6. Pour the batter evenly over the prunes in the baking dish.
  7. Bake in the preheated oven for 10 minutes.
  8. Reduce the oven temperature to 400 degrees F (205 degrees C) and continue baking until the filling is firm, has risen slightly, and the top is browned, about 30 minutes.
  9. Serve warm or at room temperature.
