  • 1 Whole green bell pepper, minced
  • 1 Whole red bell pepper, minced
  • 10 Ounces (oz) frozen corn kernels, thawed
  • 1 Whole red onion, minced
  • 0.5 Cups (cup) olive oil
  • 0.5 Cups (cup) red wine vinegar
  • 0.25 Cups (cup) fresh cilantro, torn
  • 2 Tablespoons (tbsp) fresh lime juice
  • 1 Tablespoon (tbsp) lemon juice
  • 1 Clove garlic, minced
  • 2 Tablespoons (tbsp) white sugar, to taste
  • 1 Pinch salt, to taste
  • 1.5 Teaspoons (tsp) ground cumin
  • 1.5 Teaspoons (tsp) ground black pepper
  • 1 Pinch chili powder, to taste
  • 1 Pinch hot pepper sauce, to taste

Steps

  1. Gather all ingredients.
  2. In a large bowl, combine the black beans, kidney beans, cannellini beans, green bell pepper, red bell pepper, corn, and red onion.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, cilantro, lime juice, lemon juice, garlic, sugar, salt, cumin, and black pepper. Season with chili powder and hot sauce to taste.
