- 4 Medium potatoes, sliced
- 4 Slices bacon, torn
- 2 Tablespoons (tbsp) white sugar
- 1 Tablespoon (tbsp) all-purpose flour
- 0.33 Cups water
- 0.25 Cups white wine vinegar
- 0.5 Cups green onions, minced
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
Steps
- Bring a large pot of salted water to a boil. Add the potatoes and cook until fork-tender, about 8 to 15 minutes. Drain the potatoes and set aside.
- While the potatoes are cooking, cook the bacon in a large, deep skillet over medium-high heat until browned and crispy, about 8 to 10 minutes. Remove the bacon and place it on a paper towel-lined plate, leaving the drippings in the skillet. Once cool enough to handle, chop or crumble the bacon.
- Add the sugar and flour to the bacon drippings in the skillet. Pour in the water and vinegar, and cook over medium heat, stirring to lift any browned bits off the bottom of the skillet, until the dressing is thickened, about 3 to 5 minutes. Turn off the heat.
- Add the cooked potatoes, crumbled bacon, and chopped green onions to the skillet. Stir until everything is well coated. Season with salt and pepper to taste.
