Serving Size: 8

Cooking Time: 45 minutes

Ingredients

  • 1.5 Pounds (lb) ground round, ground
  • 0.5 Medium head cabbage, shredded
  • 1.5 Medium onions, minced
  • 1 Tablespoon (tbsp) garlic, minced
  • 1 Teaspoon (tsp) crushed red pepper flakes
  • 1 Teaspoon (tsp) ground black pepper
  • 1 Cup water
  • 8 10 Inch flour tortillas
  • 2 Cups Cheddar cheese, shredded

Steps

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
  2. Stir in the shredded cabbage, minced onions, minced garlic, crushed red pepper flakes, ground black pepper, and water. Cook and stir until the vegetables are tender and the water has evaporated, about 10 minutes.
  3. While the filling cooks, heat each tortilla in a separate large skillet over medium heat until pliable.
  4. Place a tortilla on your work surface. Spoon some of the beef and cabbage filling halfway between the bottom edge and the center of the tortilla. Flatten the filling into a rectangle shape with the back of a spoon.
  5. Sprinkle 1/4 cup of shredded Cheddar cheese over the filling.
  6. Fold the bottom of the tortilla snugly over the filling, then fold in the left and right edges. Roll the burrito up to the top edge, forming a tight cylinder.
  7. Repeat with the remaining tortillas and filling.
  8. Optional: Serve with a splash of sour cream on the open end of the burrito. Enjoy with a Corona and a twist of lime for an authentic experience.
