Cooking Time: 30 minutes
Ingredients
- 12 Ounces (oz) package coleslaw mix, shredded
- 4.5 Cups red cabbage, shredded
- 3 Tablespoons (tbsp) kosher salt, coarse
- 2 Tablespoons (tbsp) apple cider vinegar
- 2 Large apples, grated
- 2 Large carrots, grated
- 0.5 Cups mayonnaise, fat-free
- 0.5 Cups sour cream, fat-free
- 1 Teaspoon (tsp) celery seed
- 1 Pinch black pepper, ground
Steps
- Place a large colander into the sink. Add the coleslaw mix and shredded red cabbage into the colander. Sprinkle lightly with kosher salt, toss, and allow to stand for 15 minutes.
- In a large bowl, pour the apple cider vinegar. Grate the apples into the bowl and toss with vinegar to prevent browning.
- Stir in the grated carrots, mayonnaise, sour cream, and celery seed until the mixture is evenly coated. Season with ground black pepper to taste.
- Rinse the coleslaw mix and cabbage with very cold water; drain, pressing out as much water as possible. If still too salty, repeat the rinsing process. Pat dry with paper towels.
- Stir the coleslaw and cabbage into the apple mixture, and toss to coat evenly with the dressing.
- Chill until ready to serve; stir before serving.
