Cooking Time: 30 minutes
Ingredients
- 4 4 Ounces (oz) links hot Italian sausage
- 1 Whole red bell pepper, halved
- 1 Small onion, peeled
- 2 Teaspoons (tsp) olive oil
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 1 Tablespoon (tbsp) olive oil
- 4 6 Inch sandwich rolls
Steps
- Preheat an outdoor grill to medium heat. Lightly oil the grill grate and set it 4 inches from the heat source.
- Pierce the sausages in a few places with a fork and set aside. Slice off the bottoms of the onion halves so they sit flat on the grill. Brush the bell pepper and onion with 2 teaspoons of olive oil.
- Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook the vegetables until tender and the peppers are slightly charred. Remove the vegetables and sausages from the grill.
- Place the peppers in a paper bag, close it, and let them cool slightly. Remove and discard the charred skin from the peppers, then slice them into strips. Slice the onion.
- In a bowl, combine salt, pepper, and 1 tablespoon of olive oil. Add the peppers and onions, tossing until evenly coated.
- To serve, place the sausages in the toasted sandwich rolls and top with the pepper and onion mixture. Enjoy your festival-style grilled Italian sausage sandwiches!
