• 2.5 Cups water
• 2 Whole potatoes, peeled
• 1 Tablespoon salt
• 1 Medium carrot, minced
• 1 Stalk celery, minced
• 0.25 Medium onion, minced
• 1 Cube beef bouillon
• 1 Tablespoon olive oil
• 0.5 Cups frozen mixed vegetables
• 10.75 Ounces can condensed cream of celery soup
• 0.25 Tablespoon dried parsley
• 0.5 Teaspoon onion powder
• 1 Pinch ground black pepper, to taste

Steps

1. In a large stock pot, bring the water to a boil and add the peeled potatoes and salt. Cook until the potatoes are tender and soft.
2. Add the minced carrot, celery, onion, frozen mixed vegetables, olive oil, and beef bouillon cube to the pot. Stir well and continue cooking until all the vegetables are soft.
