Ingredients

  • 1 Pound fresh mushrooms, sliced
  • 0.25 Cups salted butter, melted
  • 4 Green onions, sliced
  • 3 Cloves garlic, minced
  • 1 Teaspoon fresh lemon thyme leaves, minced
  • 1 Pinch salt, to taste
  • 1 Pinch white pepper, ground
  • 2 Tablespoons all-purpose flour, sifted
  • 4 Cups vegetable broth
  • 1 Cup light cream
  • 1 Sprig fresh lemon thyme leaves
  • 1 Tablespoon fresh chives, minced

Steps

  1. Thinly slice the mushroom caps and discard the stalks.
  2. Melt the butter in a heavy-bottomed pan. Add the green onions, garlic, and 1 teaspoon of lemon thyme leaves. Cook and stir for 1 minute, or until the garlic is golden.
  3. Add the mushrooms, salt, and white pepper. Cook for 3 to 4 minutes, or until the mushrooms begin to soften.
  4. Add the flour and cook, stirring constantly, for 1 minute.
  5. Remove from heat and add the vegetable broth, stirring continuously. Return to heat and stir until boiling. Reduce the heat and simmer gently for 2 minutes, stirring occasionally.
  6. Whisk in the cream and stir while gently heating; do not let it boil. Season with additional salt and pepper if needed.
  7. Ladle the soup into bowls and garnish with chopped chives and the remaining lemon thyme.
