Cooking Time: 30 minutes

Ingredients

  • 3 Cups (cups) water
  • 1 Cup (cup) quinoa
  • 1 Pinch salt, to taste
  • 3 Tablespoons (tbsp) olive oil
  • 3 Cloves garlic, minced
  • 1 Whole red bell pepper, minced
  • 0.5 Cups (cups) corn kernels
  • 1 Teaspoon (tsp) dried oregano
  • 0.5 Teaspoon (tsp) ground cumin
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste
  • 2 Whole green onions, minced

Steps

  1. In a medium saucepan, bring 3 cups of water, 1 cup of quinoa, and a pinch of salt to a boil. Once boiling, reduce the heat to medium-low, cover, and let it simmer until the quinoa is tender and has absorbed the water, about 20 minutes. Drain any excess water using a fine mesh strainer and set aside.
  2. While the quinoa is cooking, heat 3 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté until it softens and releases its aroma, about 2 minutes.
  3. Add the minced red bell pepper and corn kernels to the skillet. Cook, stirring occasionally, until the bell pepper softens, about 5 minutes.
  4. Season the vegetable mixture with 1 teaspoon of dried oregano, 0.5 teaspoon of ground cumin, and one pinch of salt and one pinch of black pepper to taste. Stir well to combine and cook for an additional minute to allow the flavors to meld.
  5. Add the cooked quinoa to the skillet and gently mix it with the vegetables. Stir in the minced green onions and cook for another minute until everything is heated through.
  6. Serve the quinoa and vegetable mixture hot or allow it to cool and serve it as a refreshing cold salad. Enjoy your savory herb quinoa with sautéed vegetables as a standalone dish or as a side to your favorite protein.
