Ingredients

  • 1 Tablespoon butter
  • 3 Medium leeks, sliced
  • 1 Medium onion, sliced
  • 5 Medium potatoes, peeled
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 0.5 Teaspoon dried marjoram
  • 0.25 Teaspoon dried thyme
  • 1 Whole bay leaf
  • 5 Cups chicken broth
  • 0.25 Cups heavy whipping cream

Steps

  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced leeks and onion, cooking until they are soft and translucent, about 5 minutes.
  3. Stir in the potatoes, salt, pepper, marjoram, thyme, and bay leaf.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 20 minutes.
  5. Remove the bay leaf and blend the soup until smooth using an immersion blender or in batches with a countertop blender.
  6. Stir in the heavy whipping cream and heat through without boiling.
  7. Adjust seasoning with salt and pepper to taste before serving.
