Cooking Time: 30 minutes

Ingredients

  • 2 10 Ounces (oz) packages spinach, divided
  • 3 Whole matzo crackers, torn
  • 4 Large eggs, whisked
  • 0.5 Teaspoons (tsp) kosher salt
  • 0.25 Teaspoons (tsp) black pepper, ground
  • 1 Pinch nutmeg, ground
  • 3 Tablespoons (tbsp) butter, unsalted
  • 2 Tablespoons (tbsp) Parmesan cheese, grated

Steps

  1. In a medium saucepan, heat the spinach with 0.5 cups of water over medium heat until completely thawed. Strain the spinach, reserving half of the liquid.
  2. Crumble the matzo crackers into a medium mixing bowl. Pour the strained spinach and reserved liquid over the matzo, mixing thoroughly until the matzo is softened.
  3. Add the whisked eggs, 2 tablespoons of grated Parmesan cheese, salt, nutmeg, and pepper to the spinach-matzo mixture. Stir until well combined.
  4. In a 12-inch non-stick skillet, melt the unsalted butter over medium heat. Once melted, add the spinach mixture, spreading it evenly across the skillet.
  5. Cook the frittata uncovered for about 5 minutes on one side, or until the edges begin to set. Carefully flip the frittata and cook for an additional 5 minutes on the other side, until fully set and golden brown.
  6. Sprinkle with additional grated Parmesan cheese before serving. Serve immediately for the best texture and flavor. Enjoy your Nutmeg-Infused Spinach and Matzo Frittata with a fresh salad on the side.
