- 2 10 Ounces (oz) packages frozen spinach, drained
- 3 Whole matzo crackers
- 4 Large eggs, whisked
- 0.5 Teaspoons (tsp) kosher salt
- 0.25 Teaspoons (tsp) black pepper, ground
- 1 Pinch nutmeg, ground
- 3 Tablespoons (tbsp) unsalted butter, melted
- 2 Tablespoons (tbsp) Parmesan cheese, grated
- 1 Pinch Parmesan cheese, grated, for garnish

- In a medium saucepan, heat the spinach with 0.5 cups of water over medium heat until completely thawed. Strain the spinach, reserving half of the liquid.
- Crumble the matzo crackers into a medium mixing bowl. Pour the spinach and reserved liquid over the matzo, mixing thoroughly until the matzo is softened.
