  • 2 10 Ounces (oz) packages frozen spinach, drained
  • 3 Whole matzo crackers
  • 4 Large eggs, whisked
  • 0.5 Teaspoons (tsp) kosher salt
  • 0.25 Teaspoons (tsp) black pepper, ground
  • 1 Pinch nutmeg, ground
  • 3 Tablespoons (tbsp) unsalted butter, melted
  • 2 Tablespoons (tbsp) Parmesan cheese, grated
  • 1 Pinch Parmesan cheese, grated, for garnish

Steps

  1. In a medium saucepan, heat the spinach with 0.5 cups of water over medium heat until completely thawed. Strain the spinach, reserving half of the liquid.
  2. Crumble the matzo crackers into a medium mixing bowl. Pour the spinach and reserved liquid over the matzo, mixing thoroughly until the matzo is softened.
  3. Add the whisked eggs, 2 tablespoons of Parmesan cheese, salt, nutmeg, and pepper to the spinach mixture. Stir until well combined.
  4. In a 12-inch non-stick skillet, melt the butter over medium heat. Once melted, add the spinach mixture, spreading it evenly in the skillet.
  5. Cook the frittata uncovered for about 5 minutes, or until the edges begin to set. Carefully flip the frittata using a large spatula and cook for another 5 minutes, or until fully set and golden brown.
