Ingredients

  • 0.25 Cups (cups) white sugar
  • 1 Teaspoon (tsp) ground cinnamon
  • 1 Cup (cups) walnuts
  • 15.25 Ounces (oz) can pears in light syrup, drained
  • 3 Tablespoons (tbsp) white wine vinegar
  • 3 Tablespoons (tbsp) fat-free vanilla yogurt
  • 2 Tablespoons (tbsp) honey
  • 0.75 Teaspoons (tsp) kosher salt
  • 0.25 Teaspoon (tsp) freshly ground black pepper
  • 1 Teaspoon (tsp) vanilla extract
  • 1 Pinch ground nutmeg
  • 0.5 10 Ounces (oz) package mixed salad greens
  • 0.5 10 Ounces (oz) package spinach leaves
  • 1 Pear, peeled
  • 0.5 Cup (cups) dried cherries
  • 0.33 Cup (cups) crumbled feta cheese

Steps

  1. Combine the white sugar, ground cinnamon, and walnuts in a skillet over medium heat. Stir until the sugar and cinnamon are melted and the walnuts are evenly coated. Remove from heat and spread the walnuts on a large plate to cool.
  2. In a blender, combine the drained pears, 0.33 cups of the reserved syrup, white wine vinegar, vanilla yogurt, honey, kosher salt, black pepper, vanilla extract, and ground nutmeg. Blend until smooth to create the dressing.
  3. In a serving bowl, toss together the mixed salad greens, spinach leaves, peeled pear, dried cherries, crumbled feta cheese, and the cooled walnuts.
  4. Serve the salad with the vanilla pear vinaigrette on the side. Enjoy!
