- 6 Leaves lettuce, torn
- 3 Leaves cabbage, shredded
- 2 Small radishes, minced
- 1 Medium cucumber, diced
- 1 Red bell pepper, minced
- 1 Carrot, shredded
- 0.25 Cup sweet corn kernels
- 1 Large tomato, diced
- 1 Small onion, sliced
- 2 Large cloves garlic, minced
- 12 Sprigs parsley, minced
- 12 Leaves mint, minced
- 0.25 Cup olive oil
- 0.25 Cup pomegranate seeds
- 0.25 Cup pomegranate syrup
- 2 6 Inch pita bread rounds
- 2 Cups vegetable oil
Steps
- In a large bowl, combine the lettuce, cabbage, radish, cucumber, red bell pepper, carrot, corn, tomato, onion, garlic, parsley, mint, olive oil, pomegranate seeds, and pomegranate syrup. Toss well to mix all the ingredients.
- If using, heat the vegetable oil in a deep-fryer or saucepan to 350 degrees F (175 degrees C). Fry the pita breads until they are golden in color. Remove and let them cool on paper towels.
