  • 1 Cup bulgur
  • 1.67 Cups boiling water
  • 0.33 Cups olive oil
  • 0.33 Cups lemon juice
  • 1 Cup green onions, minced
  • 1 Cup fresh parsley, minced
  • 0.25 Cup fresh mint, minced
  • 3 Whole tomatoes, minced
  • 1 Whole cucumber, peeled
  • 1 Teaspoon (tsp) salt
  • 1 Pinch black pepper, to taste
