  • 1 Large yellow onion, sliced
  • 1.5 Cups whole kernel yellow corn
  • 1 Cup bell pepper, minced
  • 3 Whole eggs
  • 1 Cup fat-free half-and-half
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 0.5 Cup Parmesan cheese, grated

Steps

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Heat the olive oil in a large skillet over low heat. Add the sliced onion and cook, stirring regularly, until golden and slightly caramelized, about 20 minutes.
  3. Transfer the caramelized onion to a shallow 9-by-9-inch ovenproof dish. Add the corn and bell pepper.
  4. In a separate bowl, beat the eggs and stir in the half-and-half. Pour this egg mixture over the vegetables in the dish. Season with salt and pepper, and stir to combine.
  5. Sprinkle the grated Parmesan cheese on top of the mixture.
  6. Bake in the preheated oven for 30 to 35 minutes until the pudding is firm.
  7. For a browned top, place the dish under a broiler for a few minutes.
