Ingredients

  • 1.5 Cups cubed French bread
  • 0.5 Cups sour cream
  • 0.33 Cups mayonnaise
  • 2 Tablespoons (tbsp) lemon juice, divided
  • 2 Teaspoons (tsp) Dijon-style prepared mustard
  • 2 Teaspoons (tsp) honey
  • 1 Tablespoon (tbsp) fresh rosemary, minced
  • 0.125 Teaspoons (tsp) salt
  • 0.25 Teaspoons (tsp) black pepper, ground
  • 1 Pound chicken breasts, tenderized
  • 2 Stalks celery, minced
  • 0.33 Cups golden raisins
  • 1 Tablespoon (tbsp) lemon, zested
  • 6 Leaves romaine lettuce, torn
  • 6 Leaves radicchio, torn
  • 1 Teaspoon (tsp) olive oil
  • 3 Slices red onion
  • 0.33 Cups pine nuts, toasted

Steps

  1. Preheat your oven to 350°F (175°C). Lightly spray a baking sheet with olive oil or non-stick cooking spray.
  2. Spread the cubed French bread on the prepared baking sheet. Lightly spray the cubes with oil or cooking spray and bake for 20 minutes, or until golden brown. Remove from the oven and let cool.
  3. In a bowl, whisk together the sour cream, mayonnaise, 1 tablespoon of lemon juice, Dijon mustard, honey, rosemary, salt, and black pepper. Cover and refrigerate until ready to serve.
  4. Place the chicken breasts in a pan and cover with water. Bring to a boil, then reduce the heat to medium-low and cover. Cook for 10 minutes, or until the chicken is cooked through. Remove from heat, drain, and let cool. Dice or shred the chicken.
  5. In a large bowl, combine the cooked chicken, minced celery, golden raisins, and lemon zest.
  6. When ready to serve, mix the remaining tablespoon of lemon juice with the olive oil. Tear the romaine and radicchio leaves into small pieces and toss with the lemon and oil mixture.
  7. Divide the dressed greens between plates. Top with the chicken salad mixture. Garnish with red onion slices, a sprinkle of toasted pine nuts, and the homemade croutons.
