Ingredients

  • 1.5 Cups fresh tomatoes, chopped
  • 0.25 Cups green onions, sliced
  • 0.25 Cups fresh cilantro, torn
  • 2 Tablespoons fresh lime juice
  • 1 Fresh jalapeno pepper, minced
  • 1 Clove garlic, minced
  • 1 Pinch salt, to taste
  • 2 Teaspoons canola oil, divided
  • 2 Cloves garlic, minced
  • 19 Ounces (oz) can black beans, drained
  • 0.5 Cups chicken broth
  • 1 Teaspoon chipotle chiles in adobo sauce, minced
  • 8 7 Inch flour tortillas
  • 0.5 Cups Monterey Jack cheese, shredded
  • 4 Eggs

Steps

  1. Prepare the Salsa: In a bowl, combine tomatoes, green onions, cilantro, lime juice, jalapeno, 1 clove minced garlic, and salt. Mix well, cover, and refrigerate until needed.
  2. Preheat Oven: Set the oven to 375°F (190°C) and lightly grease a baking sheet.
  3. Cook Black Beans: Heat 1 teaspoon of canola oil in a skillet over medium heat. Add garlic and cook until light brown, about 1 minute. Stir in black beans, chicken broth, and chipotle chiles. Simmer for about 5 minutes until heated through. Turn off the heat and keep warm.
  4. Prepare Tortillas: Place four tortillas on the prepared baking sheet. Sprinkle cheese evenly over them and top with the remaining four tortillas. Cover with aluminum foil.
  5. Bake Tortillas: Bake in the preheated oven until the cheese melts, about 5 minutes.
  6. Cook Eggs: Heat the remaining 1 teaspoon of canola oil in a skillet over medium heat. Crack eggs into the skillet and cook to your desired firmness.
  7. Assemble Huevos Rancheros: Place cheese-filled tortillas on four serving plates. Top each with the black bean mixture, a layer of salsa, and an egg. Serve immediately.
