Ingredients

  • 12 Ounces (oz) package coleslaw mix, shredded
  • 4.5 Cups red cabbage, shredded
  • 3 Tablespoons (tbsp) kosher salt, coarse
  • 2 Tablespoons (tbsp) apple cider vinegar
  • 2 Large apples, grated
  • 2 Large carrots, grated
  • 0.5 Cups mayonnaise, fat-free
  • 0.5 Cups sour cream, fat-free
  • 1 Teaspoon (tsp) celery seed
  • 1 Pinch black pepper, ground

Steps

  1. Place a large colander into the sink. Add the coleslaw mix and shredded red cabbage into the colander. Sprinkle lightly with kosher salt, toss, and allow to stand for 15 minutes.
  2. In a large bowl, pour the apple cider vinegar. Grate the apples into the bowl and toss with vinegar to prevent browning.
  3. Stir in the grated carrots, mayonnaise, sour cream, and celery seed until the mixture is evenly coated. Season with ground black pepper to taste.
  4. Rinse the coleslaw mix and cabbage with very cold water; drain, pressing out as much water as possible. If still too salty, repeat the rinsing process. Pat dry with paper towels.
  5. Stir the coleslaw and cabbage into the apple mixture, and toss to coat evenly with the dressing.
  6. Chill until ready to serve; stir before serving.
