  • 1 Cup uncooked brown rice
  • 1.5 Cups water
  • 1 15 Ounces (oz) can kidney beans, rinsed and drained
  • 0.25 Cups red onion, minced
  • 0.25 Cups fresh mushrooms, sliced
  • 0.25 Cups bite-size broccoli florets
  • 0.25 Cups green bell pepper, minced
  • 0.25 Cups red bell pepper, minced
  • 0.25 Cups yellow bell pepper, minced
  • 2 Tablespoons (tbsp) raw almonds, chopped
  • 1 Pinch coarse black pepper, to taste
  • 2 Tablespoons (tbsp) fat-free Italian-style dressing
  • 1 Tablespoon (tbsp) extra-virgin olive oil

Steps

  1. Combine the brown rice and water in a small saucepan. Bring to a boil over high heat. Cover, reduce the heat to medium-low, and simmer until the rice is tender and the liquid is absorbed, about 45 to 50 minutes. Remove from heat and allow to cool.
  2. In a large bowl, combine the cooled rice, kidney beans, red onion, mushrooms, broccoli, green bell pepper, red bell pepper, yellow bell pepper, and almonds. Season with black pepper.
  3. Toss the salad with Italian dressing and olive oil until well mixed.
