  • 1 Cup quinoa, drained

  • 0.25 Cups fresh lemon juice
  • 2 Stalks celery, minced
  • 0.25 Red onion, minced
  • 0.25 Teaspoon (tsp) cayenne pepper
  • 0.5 Teaspoon (tsp) cumin, ground
  • 1 Bunch fresh parsley, torn
  • 0.25 Teaspoon (tsp) sea salt, to taste
  • 1 Pinch black pepper, to taste

Steps

  1. In a dry skillet over medium heat, toast the pine nuts for about 5 minutes, stirring constantly to prevent burning. Once golden and fragrant, remove from heat and set aside to cool.
  2. In a medium saucepan, combine the drained quinoa, water, and 0.25 teaspoon of sea salt. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 10 minutes or until the quinoa is tender and the water is absorbed.
