  • 2 Whole tomatoes, minced
  • 1 Large red bell pepper, minced
  • 2 Whole jalapeno peppers, minced
  • 0.75 Cups lemon juice
  • 1.25 Teaspoons (tsp) dried cilantro
  • 0.25 Teaspoons (tsp) dried basil
  • 0.125 Teaspoons (tsp) red pepper flakes
  • 1 15 Ounces (oz) can whole kernel corn, drained
  • 1 15 Ounces (oz) can black beans, drained
  • 1 Tablespoon (tbsp) olive oil
  • 0.5 Cups yellow onion, minced
  • 0.5 Teaspoons (tsp) garlic, minced
  • 1.5 Cups brown rice, cooked
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. In a large bowl, combine the minced tomatoes, red bell pepper, minced jalapeno peppers, lemon juice, dried cilantro, dried basil, and red pepper flakes. Add the drained corn and black beans. Stir well to combine and set aside to let the flavors meld.
  2. In a medium saucepan, heat the olive oil over medium-low heat. Add the minced onions and sauté until they become translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Add the cooked brown rice to the saucepan and toss to coat with the onion and garlic mixture. If needed, add a splash of water or vegetable broth to keep the rice moist. Allow the rice to cool slightly.
  4. Combine the rice mixture with the vegetable mixture in the large bowl. Toss everything together until well combined. Season with salt and pepper to taste.
  5. Serve the salad at room temperature or chilled. Enjoy as a main dish or a side, and savor the zesty, fresh flavors!
