Ingredients

  • 1 Pound (lb) skinless, boneless chicken breast halves
  • 0.5 Cups pecans, toasted
  • 0.33 Cups red wine vinegar
  • 0.5 Cups white sugar
  • 1 Cup vegetable oil
  • 0.5 Onion, minced
  • 1 Teaspoon (tsp) ground mustard
  • 1 Teaspoon (tsp) salt
  • 0.25 Teaspoon (tsp) white pepper, ground
  • 2 Heads Bibb lettuce, torn
  • 1 Cup fresh strawberries, sliced

Steps

  1. Preheat the grill to high heat and lightly oil the grill grate.
  2. Grill the chicken until juices run clear, about 8 minutes per side. Remove from heat, let cool, and slice. Set aside.
  3. In a dry skillet over medium-high heat, toast the pecans, stirring frequently, until fragrant, about 8 minutes. Remove from heat and set aside.
  4. To make the dressing, combine red wine vinegar, sugar, vegetable oil, onion, mustard, salt, and pepper in a blender. Process until smooth.
  5. Arrange the Bibb lettuce on serving plates. Top with grilled chicken slices, strawberries, and toasted pecans. Drizzle with the prepared dressing to serve.
