- 1 - Cup heavy whipping cream
- 0.5 - Cup 4% small curd cottage cheese
- 4 - Ounces (oz) cream cheese, cubed
- 0.5 - Cup sour cream
- 1.5 - Teaspoons (tsp) kosher salt
- 1 - Teaspoon (tsp) garlic powder
- 1 - Teaspoon (tsp) onion powder
- 1.5 - Tablespoons (tbsp) fresh thyme leaves
- 0.5 - Teaspoon (tsp) black pepper, ground
- 2 - Pounds (lb) Yukon Gold potatoes, sliced
- 2 - Cups Cheddar cheese, shredded
- 30 - Whole round buttery crackers, crushed
- 2 - Tablespoons (tbsp) unsalted butter, melted
Steps
- Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).
- In a large saucepan over medium heat, combine cream of chicken soup, heavy whipping cream, cottage cheese, cream cheese, sour cream, salt, garlic powder, and onion powder. Cook, stirring often, until the cream cheese is melted, about 5 minutes. Remove from heat and stir in thyme and pepper. Add potatoes and toss to coat fully.
- Spoon half of the potato mixture into a 9x13-inch baking dish. Press down gently and spread in an even layer. Sprinkle with 1 cup of Cheddar cheese. Top with the remaining potato mixture, pressing down and spreading evenly.
- In a small bowl, stir together crushed crackers, melted butter, and remaining 1 cup of Cheddar cheese until evenly coated. Sprinkle over the potatoes. Place the baking dish on a large-rimmed baking sheet and cover with aluminum foil.
- Bake in the preheated oven until the sauce thickens and potatoes are tender, about 1 hour and 40 minutes. Remove the aluminum foil after 1 hour and 10 minutes.
- Let the casserole stand for 15 minutes before serving. Garnish with additional thyme.
Enjoy this comforting and decadent side dish with your family and friends!
