- 8 Whole lasagna noodles
- 1 Tablespoon (tbsp) olive oil
- 10 Ounces (oz) package frozen chopped spinach, drained
- 2 Tablespoons (tbsp) green onion, sliced
- 1 Pint part-skim ricotta cheese
- 0.25 Cup Parmesan cheese, grated
- 0.5 Teaspoon (tsp) salt
- 1 Large egg
- 21 Ounces (oz) Alfredo-style pasta sauce
- 1 Cup mozzarella cheese, shredded
Steps
- Preheat your oven to 375°F (190°C).
- Bring a large pot of lightly salted water to a boil. Add the lasagna noodles and cook for 8 to 10 minutes until al dente. Rinse in cold water and drain well.
- In a large saucepan over medium heat, add olive oil. Sauté the spinach and green onions until tender, stirring frequently. Remove from heat.
- In a mixing bowl, combine the sautéed spinach mixture with ricotta cheese, Parmesan cheese, salt, and egg. Mix until well combined.
- Lay the cooked lasagna noodles flat on a sheet of waxed paper. Evenly spread the cheese and spinach mixture over each noodle. Roll up each noodle from the short end, jelly-roll style.
- In an 8x12 inch baking dish, spread about 3/4 of the Alfredo sauce on the bottom. Arrange the rolled noodles, seam side down, in the dish.
- Top the roll-ups with the remaining Alfredo sauce and sprinkle with mozzarella cheese.
- Cover the dish loosely with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes to allow the cheese to brown slightly.
