Ingredients

  • 1 Whole head romaine lettuce, minced
  • 2 11 Ounces (oz) mandarin oranges, drained
  • 6 Whole green onions, sliced
  • 2 Tablespoons (tbsp) white sugar
  • 0.5 Cups almonds
  • 0.25 Cups red wine vinegar
  • 0.5 Cups olive oil
  • 1 Tablespoon (tbsp) white sugar
  • 0.125 Teaspoons (tsp) red pepper flakes, ground
  • 1 Pinch black pepper, to taste

Steps

  1. In a large bowl, combine the minced romaine lettuce, drained mandarin oranges, and sliced green onions.
  2. In a saucepan over medium heat, combine 2 tablespoons of sugar with the almonds. Cook and stir constantly until the sugar melts and coats the almonds, turning them light brown. Transfer the sugared almonds onto a plate and let them cool for 10 minutes.
  3. In a jar with a tight-fitting lid, combine the red wine vinegar, olive oil, 1 tablespoon of sugar, ground red pepper flakes, and ground black pepper. Shake vigorously until the sugar is dissolved.
