Cooking Time: 60 minutes
Ingredients
- 3 Whole russet potatoes, peeled and sliced
- 2 Tablespoons (tbsp) vegetable oil
- 0.5 Cups onion, minced
- 2 Tablespoons (tbsp) all-purpose flour
- 1 Teaspoon (tsp) prepared mustard
- 0.33 Teaspoon (tsp) salt
- 0.25 Teaspoon (tsp) celery seeds
- 0.5 Cups water
- 2 Tablespoons (tbsp) apple cider vinegar
- 0.5 Cups green bell pepper, minced
- 0.25 Cups carrots, shredded
- 0.5 Teaspoon (tsp) fresh dill, minced
- 0.25 Cups Parmesan cheese, grated
Steps
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large pot, bring salted water to a boil. Add the russet potatoes and cook until they are tender but still firm, about 15 to 20 minutes. Drain, let them cool, then peel and slice into ¼-inch-thick rounds. Set aside.
- In a medium skillet, heat the vegetable oil over medium heat. Add the minced onion and cook until soft and translucent.
- Stir in the all-purpose flour, prepared mustard, salt, and celery seeds. Gradually add the water and apple cider vinegar, stirring constantly. Cook over low heat until the sauce thickens and begins to boil.
- In a large mixing bowl, combine the sliced potatoes, minced green bell pepper, shredded carrots, and minced fresh dill. Pour the onion sauce over the mixture and stir until everything is well coated.
- Transfer half of the potato mixture into an 8x8-inch baking dish. Sprinkle with half of the grated Parmesan cheese. Add the remaining potato mixture on top and finish with the rest of the Parmesan cheese.
- Bake in the preheated oven, uncovered, for 15 to 20 minutes, or until the cheese is melted and the vegetables are heated through.
- Serve warm and enjoy the savory flavors of this dill-infused baked potato casserole.
