Ingredients

  • 3 Tablespoons (tbsp) corn oil
  • 1 Medium onion, minced
  • 1 Clove garlic, minced
  • 0.5 Cups red bell pepper, sliced
  • 3 Whole cloves
  • 1 Cup long grain rice
  • 4 Cups water, divided
  • 1 Pinch salt, to taste
  • 1 Teaspoon (tsp) cayenne pepper
  • 1 Cup broccoli, divided
  • 0.5 Cups corn kernels, divided
  • 0.5 Cups green beans, sliced
  • 0.5 Medium carrot, sliced
  • 0.25 Cups water
  • 0.5 Teaspoon (tsp) turmeric, ground
  • 1.5 Tablespoons ground black pepper
  • 0.25 Cups roasted cashews
  • 0.25 Cups fresh cilantro, torn

Steps

  1. Heat the corn oil in a large saucepan over medium-high heat. Add the onion, garlic, red bell pepper, and whole cloves. Sauté until the onion is softened and begins to brown, about 10 minutes.
  2. Stir in the rice and cook for 1 minute, stirring constantly to coat the rice with the oil and spices.
  3. Add 3.75 cups of water, salt, and cayenne pepper. Bring to a boil, then reduce the heat to medium-low. Cover and simmer until the rice is tender, about 20 minutes.
  4. While the rice is cooking, place the broccoli, corn, green beans, carrot, and 0.25 cups of water in a microwave-safe bowl. Cover and microwave on full power until the vegetables are tender, about 2 to 4 minutes.
  5. Once the rice is cooked, gently fold in the microwaved vegetables, turmeric, black pepper, and roasted cashews.
  6. Remove the whole cloves from the rice mixture.
