Ingredients

  • 2 Large eggplants, cubed
  • 1 Pinch salt, to taste
  • 0.25 Cups (cup) olive oil
  • 1 Large onion, minced
  • 2 Cloves garlic, minced
  • 1 Cup whole almonds, peeled
  • 2 Cups cherry tomatoes, sliced
  • 4 Mint leaves, sliced
  • 2 Tablespoons (tbsp) white wine
  • 2 Tablespoons (tbsp) white sugar
  • 0.5 Teaspoon (tsp) chili powder
  • 0.5 Cups fresh parsley, minced

Steps

  1. Place the eggplant cubes in a colander and sprinkle with salt. Set the colander in the sink to drain off liquid for about 20 minutes. Pat the cubes with a paper towel to remove excess salt.
  2. Heat the olive oil in a large skillet over medium-high heat. Cook the minced onion in the oil until translucent. Add the minced garlic and cook for another 2 minutes.
  3. Stir in the eggplant cubes and whole almonds, cooking and stirring until the eggplant is tender but not mushy, about 20 minutes.
  4. Once the eggplant is cooked through, mix in the sliced cherry tomatoes, sliced mint leaves, white wine, white sugar, salt, and chili powder. Cook the mixture for 10 minutes, stirring occasionally.
  5. Remove from heat and garnish with minced fresh parsley before serving.
