- 0.5 Teaspoon (tsp) black pepper, ground
- 1 Whole lime, juiced
- 0.5 Cup cilantro, minced
- 10 Ounces (oz) diced tomatoes with green chilies
Steps
- Heat the olive oil in a large saucepan over medium-high heat. Add the minced onion and minced garlic, sautéing until the onion is translucent and fragrant, about 4 minutes.
- Stir in the uncooked rice, ensuring each grain is coated with the oil and aromatics. Cook for an additional 2 minutes, stirring frequently.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
