  • 8 Whole lasagna noodles
  • 1 Tablespoon (tbsp) olive oil
  • 10 Ounces (oz) package frozen chopped spinach, drained
  • 2 Tablespoons (tbsp) green onion, sliced
  • 1 Pint (pt) part-skim ricotta cheese
  • 0.25 Cups Parmesan cheese, grated
  • 0.5 Teaspoons (tsp) salt
  • 1 Large egg
  • 21 Ounces (oz) Alfredo-style pasta sauce
  • 1 Cup mozzarella cheese, shredded
  • 2 Cloves garlic, minced
  • 0.5 Teaspoons (tsp) black pepper, ground
  • 0.5 Teaspoons (tsp) Italian seasoning
  • 2 Tablespoons (tbsp) fresh parsley, torn (for garnish)

Steps

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes until al dente. Rinse in cold water and drain well.
  3. In a large saucepan over medium heat, add olive oil. Sauté minced garlic until fragrant, about 1 minute. Add spinach and green onions, cooking until tender. Season with black pepper and Italian seasoning. Remove from heat.
  4. In a mixing bowl, combine ricotta cheese, Parmesan cheese, salt, and egg. Stir in the spinach mixture until well combined.
  5. Lay the cooked lasagna noodles flat on a sheet of waxed paper. Evenly spread the cheese and spinach mixture over each noodle. Roll up each noodle from the short end, jelly-roll style.
  6. In an 8x12 inch baking dish, spread about 3/4 of the Alfredo sauce on the bottom. Arrange the rolled noodles, seam side down, in the dish. Top with mozzarella cheese and the remaining Alfredo sauce.
  7. Cover the dish loosely with foil and bake in the preheated oven for 30 minutes, or until hot and bubbly and the cheese is melted.
  8. Remove the foil and bake for an additional 5-10 minutes to allow the top to brown slightly.
