- 1 Tablespoon (tbsp) vegetable oil
- 0.5 Whole Vidalia or other sweet onion, sliced
- 1.5 Pounds (lb) collard greens
- 0.5 Cups water
- 5 Tablespoons (tbsp) butter, melted
- 3 Tablespoons (tbsp) balsamic vinegar
- 2 Tablespoons (tbsp) honey
- 1 Teaspoon (tsp) ginger root, grated
- 1 Pinch salt, to taste
- 1 Pinch black pepper, to taste
Steps
- Heat the vegetable oil in a large skillet over medium heat. Add the sliced onion and cook, stirring, until softened, about 5 minutes.
- Gradually add the collard greens to the skillet, stirring until they wilt slightly and all fit in the skillet.
- Pour in the water and cook, stirring occasionally, until the greens are bright and tender, about 5 to 7 minutes. Drain the greens.
- While the greens are cooking, whisk together the melted butter, balsamic vinegar, honey, and grated ginger in a serving bowl.
- Add the drained greens to the bowl and toss with the vinegar mixture.
- Season with salt and freshly ground black pepper to taste. Serve warm.
