Ingredients

  • 0.33 Cups (c) white sugar
  • 0.33 Cups (c) water
  • 1 Cups (c) raisins
  • 1.5 Teaspoons (tsp) butter, melted
  • 1 Pinch salt, to taste
  • 2.25 Cups (c) all-purpose flour, sifted
  • 0.25 Teaspoons (tsp) cinnamon, ground
  • 0.25 Teaspoons (tsp) allspice, ground
  • 0.25 Teaspoons (tsp) cloves, ground
  • 0.25 Teaspoons (tsp) salt
  • 2 Teaspoons (tsp) baking powder
  • 0.5 Cups (c) shortening
  • 1 Cups (c) white sugar
  • 2 Large eggs
  • 0.5 Teaspoons (tsp) vanilla extract
  • 1 Tablespoons (tbsp) milk

Steps

  1. In a small saucepan over medium heat, combine 0.33 cups of sugar, water, raisins, melted butter, and a pinch of salt. Bring to a boil and cook until the mixture thickens and you can see the bottom of the pan while stirring. Remove from heat and let it cool completely.
  2. Preheat your oven to 375°F (190°C).
  3. In a large bowl, sift together the all-purpose flour, ground cinnamon, ground allspice, ground cloves, salt, and baking powder. Set aside.
  4. In a separate medium bowl, cream the shortening and 1 cup of sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the creamed mixture, mixing until just blended. Stir in the milk to form a soft dough.
  6. On a lightly floured surface, roll out the dough to a thickness of 1/4 to 1/8 inch. Cut into 2 1/2 inch circles.
  7. Place a teaspoon of the cooled raisin filling onto the center of half of the circles. Cover with the remaining circles and press the edges together with the tines of a fork to seal.
  8. Arrange the cookies on ungreased baking sheets. Optionally, sprinkle the tops with a little sugar for added sweetness and texture.
  9. Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
