Ingredients
- 2.5 Cups (cup) all-purpose flour
- 1.5 Teaspoons (tsp) baking soda
- 1 Tablespoon (tbsp) baking powder
- 0.5 Teaspoon (tsp) salt
- 3 Tablespoons (tbsp) white sugar
- 0.5 Cup butter, divided
- 1 Cup raisins
- 0.5 Cup currants
- 2 Teaspoons (tsp) caraway seed
- 0.75 Cup buttermilk
- 3 Tablespoons (tbsp) apple cider vinegar
Steps
- Preheat your oven to 400 degrees F (200 degrees C). Grease two baking sheets or line them with parchment paper for easy cleanup.
- In a large mixing bowl, combine the flour, baking soda, baking powder, salt, and sugar. Stir until evenly blended.
- Add the butter pieces to the flour mixture. Using a pastry blender or your fingertips, divide the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the raisins, currants, and caraway seeds until they are evenly distributed throughout the flour mixture.
- Make a well in the center of the dry ingredients. Pour in the buttermilk and apple cider vinegar. Stir gently with a wooden spoon until the dry ingredients are just moistened.
- Turn the dough out onto a well-floured surface. Knead gently 8 to 10 times, just until the dough comes together. Avoid over-kneading to keep the bread tender.
- Divide the dough into two equal portions. Shape each portion into a round loaf and place them on the prepared baking sheets.
- Bake in the preheated oven for 15 minutes.
- Reduce the oven temperature to 375 degrees F (190 degrees C) and continue baking for an additional 15 minutes, or until the tops are golden brown and the loaves sound hollow when tapped on the bottom.
- Remove the loaves from the oven and let them cool on a wire rack. Slice and serve warm or at room temperature, with butter or your favorite spread.
