Ingredients
- 1 Pound (lb) potatoes, peeled
- 2 Cups cabbage, shredded
- 1 Medium carrot, grated
- 1 Small onion, minced
- 1 Teaspoon (tsp) prepared yellow mustard
- 0.5 Cups sharp Cheddar cheese, shredded
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 2 Tablespoons (tbsp) unsalted butter, divided
- 1 Tablespoon (tbsp) olive oil
Steps
- Place the potatoes in a saucepan and cover with water. Bring to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 10 minutes. Drain and mash the potatoes, then set aside.
- In another saucepan, combine the cabbage and grated carrot. Add just enough water to cover the bottom of the pan. Cook over medium heat until tender, about 5 minutes. Drain any excess liquid.
- In a large mixing bowl, combine the mashed potatoes, cooked cabbage and carrot, minced onion, mustard, and Cheddar cheese. Season generously with salt and pepper. Mix until well combined.
- Shape the mixture into 4 equal-sized patties.
- Heat 1 tablespoon of butter and the olive oil in a nonstick skillet over medium-high heat. Once the butter has melted and the pan is hot, add the patties. Cook until golden brown and heated through, about 5 minutes per side.
- For extra crispiness, add the remaining tablespoon of butter to the pan and baste the patties as they cook.
