• 0.5 Cups butter, softened
• 2 Teaspoons vanilla extract
• 0.125 Teaspoons salt
• 2 Cups creamy peanut butter
• 2 Cups confectioners' sugar
• 2 Cups pecans, chopped
• 2.5 Cups graham cracker crumbs
• 1 Cup confectioners' sugar
• 2 Cups semisweet chocolate chips
• 2 Tablespoons shortening

Steps

1. Cream together the butter, vanilla, salt, and peanut butter in a large bowl.
2. Stir in 2 cups of confectioners' sugar, chopped pecans, and all but 0.5 cups of the graham cracker crumbs. Add the remaining graham cracker crumbs only if needed to form a moldable mixture.
3. Shape the mixture by hand into 1-inch balls.
4. Roll each ball in the remaining cup of confectioners' sugar.
5. Place the balls in a single layer on a cookie sheet and refrigerate until firm.
6. For chocolate coating, melt the chocolate chips and shortening in the top half of a double boiler until smooth.
7. Insert a toothpick into each chilled ball and dip into the melted chocolate until fully coated.
8. Set the chocolate-coated balls on waxed paper and allow them to harden.
