- 1.5 Cups all-purpose flour
- 1 Teaspoon baking powder
- 0.5 Teaspoon cardamom, ground
- 0.25 Teaspoon salt
- 0.5 Cup milk
- 2 Teaspoons instant coffee granules
- 0.25 Cup butter
- 1 Cup white sugar
- 1 Cup confectioners' sugar
- 1 Whole egg
- 1 Cup almonds, chopped
- 3 Cups confectioners' sugar
- 0.33 Cup evaporated milk
- 1.5 Teaspoons vanilla extract
Steps
- Preheat your oven to 350 degrees F (175 degrees C).
- In a bowl, combine the flour, baking powder, cardamom, and salt. Set aside.
- In a saucepan, combine milk and instant coffee. Heat on medium-low until the coffee dissolves, then remove from heat.
- In a large bowl, cream the butter with the white sugar and 1 cup of confectioners' sugar. Beat in the egg, followed by the coffee mixture.
- Gradually blend in the dry ingredients, then fold in the chopped almonds.
- Spread the dough evenly in a 9 x 13-inch baking pan.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack.
- For the frosting, place 1 cup of confectioners' sugar in a mixing bowl. Beat in the evaporated milk and vanilla extract. Gradually beat in the remaining 2 cups of confectioners' sugar until the desired consistency is reached. Adjust with more milk or sugar if needed.
