  • 1.5 Cups all-purpose flour
  • 1 Teaspoon baking powder
  • 0.5 Teaspoon cardamom, ground
  • 0.25 Teaspoon salt
  • 0.5 Cup milk
  • 2 Teaspoons instant coffee granules
  • 0.25 Cup butter
  • 1 Cup white sugar
  • 1 Cup confectioners' sugar
  • 1 Whole egg
  • 1 Cup almonds, chopped
  • 3 Cups confectioners' sugar
  • 0.33 Cup evaporated milk
  • 1.5 Teaspoons vanilla extract

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a bowl, combine the flour, baking powder, cardamom, and salt. Set aside.
  3. In a saucepan, combine milk and instant coffee. Heat on medium-low until the coffee dissolves, then remove from heat.
  4. In a large bowl, cream the butter with the white sugar and 1 cup of confectioners' sugar. Beat in the egg, followed by the coffee mixture.
  5. Gradually blend in the dry ingredients, then fold in the chopped almonds.
  6. Spread the dough evenly in a 9 x 13-inch baking pan.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack.
  8. For the frosting, place 1 cup of confectioners' sugar in a mixing bowl. Beat in the evaporated milk and vanilla extract. Gradually beat in the remaining 2 cups of confectioners' sugar until the desired consistency is reached. Adjust with more milk or sugar if needed.
  9. Once the bars are cool, frost them with the prepared icing.
