- 1 Cup cooked Great Northern beans
- 2 Whole garlic cloves, divided
- 1 Teaspoon (tsp) lime juice
- 1 Whole roma (plum) tomato
- 1 Pinch sea salt, to taste
- 1 Pinch black pepper, to taste
- 1 Tablespoon (tbsp) olive oil, extra virgin
Steps
- Begin by toasting the pine nuts in a dry skillet over medium heat until they are golden brown and fragrant. This should take about 3-4 minutes. Set aside to cool.
- In a food processor, combine the toasted pine nuts, fresh basil, and oregano. Pulse 2-3 times until the nuts are finely ground.
- Add the cooked Great Northern beans and divided garlic cloves to the processor. Blend until the mixture is smooth, about 30 seconds to 1 minute.
- Pour in the lime juice and add the roma tomato. Season with sea salt and black pepper to taste. Pulse 2-3 times until the mixture is smooth and spreadable.
