Serving Size: 12

Cooking Time: 40 minutes

Ingredients

  • 0.5 Cup raisins
  • 1 Large egg
  • 0.75 Cup milk
  • 1.5 Cups bran cereal (such as Kellogg's All-Bran® Original Cereal)
  • 1 Cup whole wheat flour
  • 1 Teaspoon (tsp) baking soda
  • 1 Teaspoon (tsp) ground cinnamon
  • 2 Tablespoons (tbsp) butter, melted
  • 1 Whole apple, shredded
  • 1 Whole ripe banana, mashed
  • 0.5 Cup honey

Steps

  1. Preheat your oven to 400 degrees F (200 degrees C). Prepare a 12-cup muffin tin by greasing it or lining it with paper liners.
  2. Place the raisins in a microwave-safe bowl and cover them with water. Microwave on high for 1 minute to plump them up. Drain and set aside.
  3. In a large mixing bowl, beat the egg and mix it with the milk. Stir in the bran cereal and let the mixture sit for about 5 minutes, allowing the cereal to absorb the liquid.
  4. Gently fold in the plumped raisins, whole wheat flour, baking soda, ground cinnamon, melted butter, shredded apple, mashed banana, and honey. Stir until just combined, being careful not to overmix.
  5. Evenly distribute the batter into the prepared muffin cups, filling each about three-quarters full.
  6. Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  8. For an optional honey glaze, warm a few tablespoons of honey and drizzle over the cooled muffins before serving.
