Serving Size: 12
Cooking Time: 40 minutes
Ingredients
- 0.5 Cups raisins
- 1 Whole egg
- 0.75 Cups milk
- 1.5 Cups bran cereal
- 1 Cup whole wheat flour
- 1 Teaspoon (tsp) baking soda
- 1 Teaspoon (tsp) ground cinnamon
- 2 Tablespoons (tbsp) butter, melted
- 1 Whole apple, shredded
- 1 Whole ripe banana, mashed
- 0.5 Cups honey
Steps
- Preheat your oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line them with paper cupcake liners.
- Place the raisins in a microwave-safe bowl and cover them with water. Microwave on high for 1 minute to plump them up. Drain the raisins and set them aside.
- In a large bowl, beat the egg and mix it with the milk. Add the bran cereal and let the mixture stand for about 5 minutes until the cereal absorbs the liquid.
- Gently fold in the plumped raisins, whole wheat flour, baking soda, ground cinnamon, melted butter, shredded apple, mashed banana, and honey. Stir just until combined, being careful not to overmix.
- Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full.
- Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
