Ingredients

  • 2 Cups all-purpose flour
  • 0.75 Cups white sugar
  • 0.5 Teaspoon (tsp) baking soda
  • 0.5 Cups butter
  • 0.5 Cups dried currants
  • 0.25 Cups buttermilk
  • 1 Whole egg
  • 0.25 Teaspoon (tsp) salt
  • 1 Teaspoon (tsp) caraway seed

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking soda, salt, and caraway seeds. Use a pastry blender to cut in the butter until the mixture resembles coarse meal. Stir in the currants.
  3. Mix in the beaten egg. Pour in the buttermilk and mix with a fork to form a soft dough. You may need to add a little more buttermilk if necessary.
  4. On a floured surface, shape the dough into a ball and knead lightly 5 or 6 times. Roll out the dough to 1/4 inch thick and cut into squares and triangles with a knife. Place the cookies on the prepared baking sheets.
  5. Bake for 12 to 14 minutes or until the cookies are slightly browned.
