Cooking Time: 45 minutes
Ingredients
- 12 Whole tomatillos, peeled
- 1 7 Ounces (oz) can jalapeños, drained
- 0.5 Head lettuce, torn
- 2 Whole garlic cloves, minced
- 0.5 Cups fresh cilantro, torn
- 3 Tablespoons (tbsp) cumin, ground
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 2 Tablespoons (tbsp) unsalted butter
- 0.25 Small onion, minced
- 0.25 Cup chicken broth
Steps
- Preheat your oven to 400°F (200°C). Spread the tomatillos and jalapeños on a baking sheet and roast for 10-15 minutes until they are slightly charred and softened. This will enhance their flavors.
- In a blender or food processor, combine the roasted tomatillos, jalapeños, lettuce, garlic, fresh cilantro, cumin, salt, and pepper. Blend until you achieve your desired consistency, whether smooth or slightly chunky.
- In a medium saucepan, melt the butter over medium heat. Add the minced onion and sauté until it becomes translucent, about 5 minutes.
- Pour the tomatillo mixture and chicken broth into the saucepan with the onions. Stir well to combine.
- Cook the salsa over medium heat, stirring occasionally, until it begins to thicken, about 20 minutes. Adjust seasoning with additional salt and pepper if needed.
- Allow the salsa to cool slightly before serving. Enjoy it as a dip with tortilla chips, or as a topping for your favorite Mexican dishes.
